Ask our kitchen what’s on the menu this week, and you’ll usually get a shrug before an answer. That’s not a service failing; it’s the point. The menu at Vota Ranch follows the harvest, not the other way around, so what lands on your plate depends on what came out of the ground that morning.
Right now, that means a lot of leafy greens- sukuma wiki, spinach, and managu are all coming in steadily, along with the first tomatoes of the new planting. Maize is a few weeks off, but the beans planted alongside it are already filling out.
Why we cook this way
A farm-to-fork kitchen only works if the farm actually drives the fork. Most places that use the phrase still order in bulk from a supplier and call it a day. Ours runs the other direction: the cooks walk the farm most mornings, see what’s ready, and build the day’s dishes around it.
It means the menu changes constantly, sometimes week to week. It also means everything tastes like it was picked that day, because it was.
What guests notice most
- Vegetables that taste like themselves, not the flattened, well-travelled version most people are used to
- A kitchen that will happily tell you exactly what’s in season if you ask
- Meals that shift with the calendar, so no two visits taste quite the same
The best meal we ever serve is usually the one where the cooks had the least to plan and the most to pick from.
If you’re visiting soon, don’t bother asking for a fixed menu in advance; ask what’s ready instead. That’s the more interesting question, and it’s the one our kitchen actually enjoys answering.
